People prefer to drink them either before meals or to round off a meal. What makes sherry so popular or different from other wines is the special way that it is blended. It was in the 18th century that this way of wine blending, called solera system, was developed. According to the system since then, wooden casks have to be interconnected first and then stacked in tiers for later use. Whenever the young sherries are made ready, they are usually poured into the casks at the top, whereas the mature sherries are being drawn out of the casks at the bottom. So the different sherries get constantly mixed up in this way. For one cask among such tiers, only one third of the content is drawn out of it in any one year.
